Cafe Rio is a restaurant chain prominent in Utah, with branches in Arizona and Nevada with emphasis on expanding to California and Idaho, serving a variety of Mexican style food.
Cafe Rio’s recipes are inspried from the traditional cooking in the Rio Grande Region of Northern Mexico., Southern Texas and New Mexico. At the end of 2008, it consisted of twenty one restaurants, seventeen in the state of Utah, one in Arizona and three in Nevada.
Steve and Patricia Stanley started the business in 1997 in St. George, Utah. They expanded to 6 restaurants and they later sold it in 2004 to former Burger King president Bob Nilsen, who is the existing President/CEO. Bob has helped position Cafe Rio as one of America’s fastest growing companies.
The chain offers traditional Tex-Mex food, such as burritos, enchiladas, and tacos, as well as a rotating selection of daily specials. In addition to dining, the restaurants offer to-go service for those who want to enjoy their meals at home.
Everything is made to order, with a portion of the kitchen dedicated to making fresh tortillas. Meals are served in foil containers, so taking home leftovers is a breeze.
Burritos are the most popular choice–shredded chicken and pork barbacoa are both can’t-miss fillings. Get a burrito covered with salsa and cheese–”enchilada-style”–for an extra 95 cents. Don’t skip the nicely spiced tortilla chicken soup. My personal favorite, the grilled salmon taco…is to die for.
With no freezer or microwaves in any of their restaraunts and no artificial ingredients in there foods, Cafe Rio offers the highest quality, freshest food you will find anywhere.
